hi guys, removing panels and replacing it with carbon fiber unit is legal providing it has fiberglass backing on it.
composit panels are also legal as long as you don't cut structural part of the car I.E: chasis.
front guards, bonnet, boot, hatch, is legal.
roof and rear guards replacement is for race use only.

doors is illegal due to the side impact protection, but if you have roll cage installed with side impace, then it is legal.

i have these points clarified by the vicroads guidelines.
